Having farm fresh fruit all summer inspired me to do some jelly/jam making. I seem to have an inability to use the correct amount of pectin however so they run the gamut from nice and firm to sryupy. They always taste good but don't always spread so well.
Today after waiting and waiting and waiting for the fruit to ripen only to find out I didn't need for them to be ripe it was better if they are under-ripe I made quince jelly.

Then mash it
Strain it
to get this
Then you boil it with some sugar and viola
jelly....
it tastes rather like honey. We'll see how it sets up...
